Taste 14: Hudson Baby Bourbon Whiskey

Last year I became familiar with Tuthilltown Spirits, a craft distillery in Gardiner, New York, and producer of Hudson Baby Bourbon Whiskey.  I attended back-to-back tastings by Gable Erenzo, chief distiller.  Gable talked to us about each spirit as we sampled their New York Corn Whiskey, Husdon Baby Bourbon, Four Grain Bourbon, and Manhattan Rye. The guided whiskey tasting by Tuthilltown Spirits was a great way to taste a number of their products in progression from un-aged (white whiskey) to the spicy rye.  I enjoyed each one individually and gained a great appreciation for this small, up-state NY distiller.

Aged Cocktails: the Vieux Carré

“And now, making it easier to DIY, Tuthilltown Spirits, who I visited a few weeks ago and who also supplied Morgenthaler with his first batch of barrels, have come out with the cocktail aging bottle.  That’s right, a glass bottle (the same one they use for their bourbons, in fact) with a piece of used oak barrel inside.  When I saw these, I racked my brain for who would think they were as cool as I did and actually use them, so I could buy as many as possible as gifts.  Unfortunately, the list was short.  And so for my less cocktail-savvy (and extremely lucky) friends, I made individual bottles of aged Vieux Carrés as this year’s homemade holiday present.”

And barmen mostly have been using liquors that can stand up to the flavours of charred oak, like gin with its botanical aromas. With vermouth, a staple in many cocktails, you get a little oxidation, but that’s not necessarily a bad thing, says Reynolds.

One of Reynolds’s classic cellared cocktails is a whiskey barrel-aged Negroni, a cocktail made of gin, sweet vermouth and Campari aged in cured whiskey barrels from Tuthilltown Distillery in New York.”
