A blog written by Laura Reiley from the St. Petersburg Times talking about aging cocktails in our bourbon barrels. Here is a quick preview.
“I’Like the rabbit pulled out of the hat, barrel aging is all mysterious transmogrification that takes place in the inky dark, away from human eyes. A young red wine or whiskey, balsamic vinegar or even Tabasco sauce goes into a barrel. It spends some time mellowing, taking on secondary characteristics like wood tannins and vanillin, and emerges a sophisticated, nuanced version of its former self.”

American Cocktails
“The ultra-premium brand is a small batch whiskey from Tuthilltown Spirit, a farm distillery in Gardiner, New York, in the heart of the Hudson Valley. The first legal pot-distilled rye whiskey to be distilled in the Hudson Valley in over 70 years, Hudson Manhattan Rye is distilled in a traditional copper pot still from whole grain rye and pure spring water. The whiskey is then matured in new charred oak barrels for less than four years and bottled unfiltered. It is hand-filled, capped, waxed and numbered.”

“Who knew that gin could be made in Brooklyn or bourbon in the Hudson Valley? These spirit companies are taking drinking local to the next level, and local doesn’t mean drinking at the “local” watering hole. It equates to resourceful entrepreneurs who are finding ways to create sustainable spirits in New York’s backyard.”
